Ingredients:
- 3 large ripe bananas, mashed
- 8 tablespoons unsalted butter, melted
- 1/2 cup brown sugar
- 1 large egg, at room temperature
- 1 teaspoon vanilla extract
- 1 1/2 cups oat flour
- 1 teaspoon baking soda
- Pinch of salt (more than 1year)
- 1/2 cup semi-sweet chocolate chips, plus extra for topping
Instructions:
- Preheat your oven to 350ยฐF (175ยฐC). Grease a loaf pan or line it with parchment paper.
- In a large bowl, combine the mashed bananas and melted butter. Mix well.
- Stir in the brown sugar, egg, and vanilla extract until the mixture is smooth.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the banana mixture, stirring just until combined. Do not overmix.
- Fold in the chocolate chips gently.
- Pour the batter into the prepared loaf pan. Sprinkle a few extra chocolate chips on top for garnish.
- Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
