Ingredients:
- 2 cups chopped broccoli florets (about 1 medium head)
- 1 cup grated carrot (about 2 medium carrots)
- 1 cup grated cheese that melts well (such as cheddar, mozzarella, or a blend)
- 4 large eggs
- Salt and freshly ground black pepper to taste
Instructions:
- Preheat your oven: Set your oven to 200°C (392°F).
- Prepare the vegetables: Wash the broccoli thoroughly and chop it into small, bite-sized florets. Peel the carrots and grate them.
- Combine ingredients: Combine the chopped broccoli, grated carrot, and grated cheese in a medium-sized mixing bowl.
- Whisk the eggs: In a separate bowl, crack the 4 eggs. Add salt and freshly ground black pepper to your liking. Whisk the eggs thoroughly until the yolks and whites are fully combined and slightly frothy.
- Mix everything: Pour the whisked egg mixture over the vegetables and cheese in the bowl. Stir everything well until all the vegetables and cheese are evenly coated with the egg.
- Transfer to baking dish: Pour the mixture into a greased pie dish or an oven-safe baking dish (approximately 8-inch or 9-inch). You can also use individual ramekins.
- Bake: Place the baking dish in the preheated oven and bake for 30 minutes, or until the pie is golden brown and the eggs are set. You can test for doneness by inserting a knife into the center; it should come out clean.
- Cool slightly and serve: Once baked, remove the pie from the oven and let it cool for a few minutes before slicing and serving. It’s delicious served warm!
