Ingredients:
- 1 small head of broccoli (approximately 250g), florets removed
- 3 large eggs
- 3/4 cup whole wheat flour
- 1 packet (approximately 7g) baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: 1/4 cup shredded cheddar cheese or parmesan cheese for added flavor
Instructions:
- Preheat the oven: Preheat your oven to 190Β°C (375Β°F). Line a baking tray or loaf pan with baking paper to prevent sticking.
- Prepare the broccoli: Wash the broccoli florets thoroughly. You can finely chop them using a food processor until they are almost grated, or manually grate them using a box grater.
- Combine the ingredients: In a large mixing bowl, whisk the eggs until they are lightly beaten. Add the grated or processed broccoli, whole wheat flour, baking powder, salt, and black pepper. Mix well until all the ingredients are thoroughly combined and you have a smooth batter. If you’re using cheese, add it now and mix it in.
- Bake the bread: Pour the broccoli mixture into the prepared baking tray or loaf pan, spreading it evenly. Bake in the preheated oven for approximately 30 minutes, or until a toothpick inserted into the center comes out clean. The top of the bread should be golden brown.
- Cool and enjoy: Once the broccoli bread is baked, remove it from the oven and let it cool in the pan for a few minutes before transferring it to a wire rack to cool completely. You can enjoy it warm or at room temperature.
