Who says eating healthy and enjoying a delicious donut are mutually exclusive?
With this recipe, you can offer your baby and treat yourself to a sweet and nutritious indulgence at the same time. They’re perfect for breakfast, a snack, or satisfying that sweet craving any time of day!
Ingredients (for 4 donuts)
- Carrot: 150 grams (approximately 2 medium carrots)
- Eggs: 2 (preferably free-range)
- Dates: 50 grams (about 5-6 Medjool dates) or 1 ripe banana (about 120 grams)
- Oat flour: 40 grams (you can use buckwheat flour if you are gluten intolerant)
- Cinnamon: 1 teaspoon (adjust to taste for +12m)
- Baking powder: 8 grams (1 sachet)
- Coconut oil or olive oil: for greasing the molds
- Yogurt: for decorating (you can use Greek or plain yogurt)
Instructions
- Prepare the ingredients: Wash, peel, and chop the carrot. Pit the dates (if using) and chop them. If using a banana, slice it.
- Blend: Combine all the ingredients (carrot, eggs, dates or banana, flour, cinnamon, and baking powder) in a food processor or powerful blender. Blend until you have a smooth, lump-free batter.
- Bake: Preheat the oven to 180°C (350°F). Lightly grease donut molds with coconut oil or olive oil. If you don’t have specific molds, you can use muffin tins or make your own with parchment paper.
- Fill the molds: Distribute the batter evenly among the molds, filling them about 3/4 full.
- Bake: Place the molds in the oven and bake for about 20 minutes, or until the donuts are golden brown and a toothpick inserted into the center comes out clean.
- Cool and unmold: Remove the donuts from the oven and let them cool completely in the molds. Once cool, carefully unmold them. If they don’t come out easily, you can run a silicone spatula around the edges to help loosen them. If they still won’t unmold, freeze the donuts for a couple of hours and then try to unmold them frozen.
- Decorate: Lightly dip the top of each donut in yogurt (you can mix natural and Greek yogurt for a creamier texture) and sprinkle a little more cinnamon on top.

- Variations: Add other ingredients to the batter, such as chopped nuts, chia seeds, or dark chocolate chips.
- Sweeteners: If you prefer another sweetener instead of dates or bananas, you can try honey(+1year)
- Storage: The donuts keep well in an airtight container in the refrigerator for a few days.
- Freezing: You can also freeze the cooked donuts to enjoy later. To thaw, leave them at room temperature for a few hours or heat them in the microwave for a few seconds.
