(1)Spinach Soft Cheese Wrap
:

  • Ingredients:
    • 1 cup baby spinach
    • 2 eggs
    • 4 oz cream cheese, softened
    • 1/4 cup crumbled feta cheese
    • 1/4 cup chopped green onions
    • Salt and pepper to taste
  • Instructions:
    • blend spinach, green onions, and eggs to have a smooth consistency
    • Place the mixture on the pan for 5-10 minutes until cooked
    • Mix cream cheese, and feta
    • Spread mixture on tortillas.
    • Roll up tightly.
    • Enjoy!

(2) Veggie Pasta Hoops:

  • Ingredients:
    • 1 cup rotini pasta
    • 1 tomato
    • 2 colored bell peppers
    • 1 zucchini
    • Salt and pepper to taste
    • 2 teaspoons of olive oil
  • instructions:
    • boil the pasta in broth or water till cooked, Drain and set aside.
    • Place 1 tomato, 2 bell peppers, 1 zucchini, Salt and pepper to taste, and 2 teaspoons of olive oil in a tray and bake at 180°C for 5 to 10 minutes.
    • blend the cooked ingredients to have a sauce
    • mix with the pasta and enjoy.


(3) Sweet Potato and Apple Pancakes:

  • Ingredients:
    • 1 cup mashed cooked sweet potato
    • 1/2 cup all-purpose flour
    • 1 egg
    • 1/2 cup yogurt
    • 1/4 cup chopped apple (peeled and cored)
    • 1/4 teaspoon ground cinnamon and Pinch of salt (for +12 if younger don’t use
    • Olive oil or butter for cooking
  • Instructions:
    • Combine Ingredients: In a large bowl, whisk together the mashed sweet potato, flour, egg, yogurt, chopped apple, cinnamon, and salt (if using).
    • Cook Pancakes: Heat a lightly oiled griddle or frying pan over medium heat. Pour 1/4 cup of batter for each pancake onto the hot skillet.
    • Flip and Serve: Cook for 5-6 min or until golden brown on the bottom, then flip and cook until the other side is golden brown. Serve immediately and enjoy



(4) Creamy Broccoli Orzo:

  • Ingredients:
    • 1 cup orzo pasta
    • 1 head of broccoli, chopped into small florets
    • 1/4 cup heavy cream
    • 1/4 cup grated Parmesan cheese
    • Salt and pepper to taste
  • Instructions:
    • Cook Pasta: Cook the orzo pasta according to package directions until al dente. Drain and set aside.
    • Steam Broccoli: Steam the broccoli florets until tender-crisp, about 5-7 minutes.
    • Combine Ingredients: In a large saucepan, combine the cooked orzo, steamed broccoli, heavy cream, and grated Parmesan cheese. Stir well to combine.
    • Heat and Serve: Bring the mixture to a simmer over low heat for 3-5 min Season with salt and pepper to taste. Serve immediately
