(1)Spinach Soft Cheese Wrap:
- Ingredients:
- 1 cup baby spinach
- 2 eggs
- 4 oz cream cheese, softened
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped green onions
- Salt and pepper to taste
- Instructions:
- blend spinach, green onions, and eggs to have a smooth consistency
- Place the mixture on the pan for 5-10 minutes until cooked
- Mix cream cheese, and feta
- Spread mixture on tortillas.
- Roll up tightly.
- Enjoy!

(2) Veggie Pasta Hoops:
- Ingredients:
- 1 cup rotini pasta
- 1 tomato
- 2 colored bell peppers
- 1 zucchini
- Salt and pepper to taste
- 2 teaspoons of olive oil
- instructions:
- boil the pasta in broth or water till cooked, Drain and set aside.
- Place 1 tomato, 2 bell peppers, 1 zucchini, Salt and pepper to taste, and 2 teaspoons of olive oil in a tray and bake at 180°C for 5 to 10 minutes.
- blend the cooked ingredients to have a sauce
- mix with the pasta and enjoy.

(3) Sweet Potato and Apple Pancakes:
- Ingredients:
- 1 cup mashed cooked sweet potato
- 1/2 cup all-purpose flour
- 1 egg
- 1/2 cup yogurt
- 1/4 cup chopped apple (peeled and cored)
- 1/4 teaspoon ground cinnamon and Pinch of salt (for +12 if younger don’t use
- Olive oil or butter for cooking
- Instructions:
- Combine Ingredients: In a large bowl, whisk together the mashed sweet potato, flour, egg, yogurt, chopped apple, cinnamon, and salt (if using).
- Cook Pancakes: Heat a lightly oiled griddle or frying pan over medium heat. Pour 1/4 cup of batter for each pancake onto the hot skillet.
- Flip and Serve: Cook for 5-6 min or until golden brown on the bottom, then flip and cook until the other side is golden brown. Serve immediately and enjoy

(4) Creamy Broccoli Orzo:
- Ingredients:
- 1 cup orzo pasta
- 1 head of broccoli, chopped into small florets
- 1/4 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Instructions:
- Cook Pasta: Cook the orzo pasta according to package directions until al dente. Drain and set aside.
- Steam Broccoli: Steam the broccoli florets until tender-crisp, about 5-7 minutes.
- Combine Ingredients: In a large saucepan, combine the cooked orzo, steamed broccoli, heavy cream, and grated Parmesan cheese. Stir well to combine.
- Heat and Serve: Bring the mixture to a simmer over low heat for 3-5 min Season with salt and pepper to taste. Serve immediately
