You Will Need:

  • Sweet potatoes
  • Plain rice milk
  • Cinnamon Powder

How To:

  • Bake the sweet potatoes. Leave them aside to cool. Peel the potatoes and mash them well in a bowl.

  • Vegetable broth
  • Chopped baby corn
  • Red bell peppers
  • Broccoli
  • baby spinach leaves
  • Peas
  • Fresh ginger paste – optional
  • Tofu
  • Minced scallions
  • Salt, black pepper or soy sauce – optional
  • Water

How To Make:

  1. Heat a pot. Add the broth, baby corn, and ginger. Bring it all to a simmer.
  2. Next add the bell peppers, peas, broccoli, tofu, and peas. You can also add water.
  3. Add the scallions and spinach and stir.
  4. Add soy sauce, salt or pepper and serve after five minutes.
